Thunderbird Bakery & Cafe - 959 W. 6th Ave, Oshkosh
Fresh sourdough, charming baked goods, and just about the cutest cafe you can imagine- Thunderbird Bakery! To say Oshkosh is lucky to be home to Thunderbird is a massive understatement! Thunderbird Bakery was started by Trent and Lizz Redman in 2018 and started by selling at the Oshkosh Farmers Market. After quickly reaching capacity there, they opened their wholesale kitchen space in 2019 and the retail cafe opening in 2023! Now in their permanent home, located at 959 W 6th Ave in Oshkosh, Thunderbird is pushing out some of the best treats in town! As a self-proclaimed sandwich connoisseur, I was very excited for this stop! And in natural Hudak fashion, I sampled all of the sandwiches to give you an accurate run down of just how fantastic everything was!
Homemade Breads are a MUST!
Country rustic, sandwich loafs, cheddar jalapeno sourdough - oh my! Thunderbird Bakery is your go to bread spot offering a wide variety of homemade bread options ranging from mild, tangy flavors to seeded whole wheat breads. Pick up a pack of freshly baked rolls for your next family dinner - or grab a sourdough loaf for a friend to make a delicious sandwich on!
Breakfast Items
First up, the classic Bacon, Egg, and Cheese croissant! Housemade croissant, perfect Neuske’s bacon, egg, cheddar cheese, and herbed mayo- wow. It is a dream of a breakfast sandwich that I would not be mad starting my day with every day!
Pastries are always a good idea - and Thunderbird has a variety to choose from! From seasonal treats like a blueberry gallette, to staple sweets including cinnamon rolls and chocolate croissants - Thunderbird really knows what they are doing!
Yummy Sandwiches
Grilled cheese- an absolute classic that is taken to the next level on their homemade sourdough. Wisconsin cheddar, provolone, and gruyere are the perfect combination on their country sourdough. It is everything you want in a grilled cheese and more! Check their website and socials for seasonal menu items like their recent pesto grilled cheese!
Veggie sandwich, (with bacon, because bacon makes everything better in my books!), was the freshest sandwich with a unique twist! House made hummus, provolone, pea sprouts, pickled ginger carrots, cucumber, and Neuske’s bacon all on their seeded wheat sandwich bread is a sandwich I think anyone can get behind. At least give it a try, you will be greatly surprised how great everything goes together!
Chicken sandwich- but make it Thunderbird style! Roasted chicken, red curry mayo, dried apricots, and greens all on their country sourdough- this sandwich made my top three on my visit! The red curry mayo really makes this one of the most unique chicken salad sandwiches you will ever have. A little spicy, a little sweet and I already can’t wait to go back again! (They also sell the chicken salad in a tub!)
BLT- my number two sandwich of the day! Something so simple, Thunderbird really found a way to make this one of the best BLT’s I have ever had! Fresh local tomatoes from Pickett Produce, Neuske’s bacon, spicy mayo, and local greens on their country sourdough. 42 stars, would absolutely eat this every day without complaint!
My number one sandwich of the day- Cubano! Pulled pork, ham, swiss cheese, pickles, and Dijon mustard on their country sourdough, pressed into one of the best paninis you will find! We still talk about this sandwich and how great it was! Please, everyone go and order a few because one will not be enough!
Pastries, Desserts & More!
Last but certainly not least- our very favorite Spelt Chocolate Chip Cookies! The chewiest sweet and salty cookie out there, you are going to want a dozen! Find a variety of sweet and savory options - from blondies and shortbreads to savory galettes and ham & cheese croissants!
Lizz and Trent, you really have outdone yourselves! We couldn’t love this space more and we are forever grateful for bringing the art of fresh bread and baked goods back to Oshkosh! After you have tried the sandwiches, please let me know your favorites and if I missed anything I need to try!
